The Sauvignon Blanc vineyard is 25 years old and is located in one of the wadis adjacent to Mt. Tabor. Following particularly low yields, winegrower Arie Sela "adopted" the 2.7 acre plot of land situated on the western escarpment of the wadi - on land rich in limestone sediment. The vineyard underwent rehabilitation and was lovingly cared for until harvest time. This is a wine rich in tropical fruit tastes, with hints of the grassy and mineral character of the Sauvignon Blanc variety grape. The wine is pleasantly acidic and has a high level of CO2 as a result of sustained low temperature fermentation, which contributes to the wine's sprightly and aromatic character. All of the processes were done with the intention of retaining the characteristics of the variety - as grown on the land of Kfar Tabor - and preserving the aroma characteristic of limestone soil and the vineyard's microclimate.
